Magic Bullet Express Winners

I didn’t want you guys to have to wait to know who won.  I will contact each person, but please know I can not turn your info in right away due to my medical issue.  Make sure you contact me with your shipping info, including phone number!

Please read my posts about what is happening.  I am sharing my story with everyone so that maybe I can help someone else!  I also need positive support.  The comments mean the world to me.  I will update as I can.  Hopefully surgery will be soon!  I need this thing out of me.

Green Veggies Couscous

  • 1/2 C couscous
  • 1 tsp olive oil
  • 1/4 C frozen peas (cooked and drained)
  • 1/4 – 1/2 C avocado peeled and chopped
  • dash of lemon juice
  • a couple pinches of fresh dill washed and minced
  • 1/2 C water

Place the couscous in a bowl add the olive oil, lemon juice and 1/2 cup boiling water.  Cover and allow to soak for 5 minutes, then fork to separate the grains.  Add the peas, avocado and dill to the couscous and fluff with a fork!

Sweet Potato Custard

  • 1 cup mashed cooked sweet potato
  • 1/2 cup mashed banana
  • 1 cup evaporated skim milk
  • 2 Tbs packed brown sugar
  • 2 beaten egg yolks
  • 1/2 tsp salt Nonstick cooking spray
  • as needed 1 Tbsp sugar 1 tsp ground cinnamon

Get out a bowl and add the sweet potato and banana to it. Make sure both are well mashed. Add the milk and stir until combined. Add the brown sugar, egg yolks and the salt and mix well. Add the mixture to a 1 quart casserole dish that has been sprayed with the cooking spray. Combine the sugar and cinnamon in a small cup or bowl and sprinkle it over top of sweet potato mixture. Bake at 325 for 45 minutes. Your custard is done when a knife or toothpick inserted in the middle comes out clean.

Sweet Potato Puree

For young babies, start out just plain, or maybe add some cinnamon and applesauce. For toddler finger food, I use it for my sweet potato quesadillas. It is one of Drew’s favorites. Take whole wheat tortillas; put some thawed sweet potato puree on half of it. Next I spread shredded chicken and cheddar on top the sweet potato. Fold it in half and microwave for 10-15 seconds; just enough to have the cheese melt. Cool and cut in to bite size squares.

Banana Avocado for Baby Recipe

  • 1/2 small ripe banana
  • 1/2 very ripe avocado, pitted

Mash the two together in a small bowl. If the baby prefers very smooth food, you may wish to add a small amount of expressed breast milk or yogurt.
