Veggiecation, Nutrition Education

I’ve said before and I’ll say it again…the majority of kids eat like crap.  They are on this fast food gimme gimme gimme mode and their stuck.  It has to change!  Veggiecation is a curriculum based nutrition education company that is available in elementary level classrooms nationwide.

But…

It’s also available for parents need health and nutrition resources to use while teaching their kids at home. They have the program for homeschool available for individual purchase.

We eat a lot of veggies in our home and it has been fun finding new ways to enjoy our vegetables.  Bento is a fun way to incorporate healthy foods for kids.  New exciting recipes that present veggies in a different way may get a kid to like something that they didn’t like before.

Veggiecation helps young kids with their food choices while demonstrating that eating vegetables is healthy, fun and delicious.

Veggiecation was founded by Lisa Suriano, a certified nutritionist. Lisa’s credentials include Master of Science, Nutrition and Food Science, and Serv-Safe Certification for proper food handling and protection against food borne illness. Today, Lisa “Veggiecates” our kids on healthy food choices.

Zucchini, Tomato & Parmesan Bake

Yield: 5 servings

INGREDIENTS:

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 plum tomatoes, sliced into 1/4-inch rounds
  • 1 garlic clove, minced
  • 1/2 tsp oregano
  • 2 tbsp olive oil
  • 1/4 cup flat leaf parsley, chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

DIRECTIONS:

– Preheat oven to 350 degrees.

– In a bowl, toss the zucchini and tomatoes with the garlic, oregano, olive oil, parsley, salt and pepper.

– In an oiled baking dish, arrange the zucchini in overlapping rows. Then arrange the tomatoes on top of the zucchini.

– Sprinkle the Parmesan cheese on top of the tomatoes.

– Bake for 35 minutes.

– Cool in the pans on a rack for 20 minutes. Remove the bread from the pans and cool.
