Making Healthy Eating Fun for Your Kids, A Recipe Swap and Giveaway!

looneyI’m going to post a few things that we make around here that the kids love!  I would love for you to share some of your own recipes and ideas in the comments.  Remember…each comment gets you an entry for the gift basket!  You can comment on any of the posts that feature Bugs Bunny and his Eating Right sign!

I think I mentioned before that we love Bento!  Bento is fun and you can really get kids to eat some different things by making it cool or pretty!  You can take healthy foods and shape them into characters that they love!  They will want to eat it even more if you let them help!

There are streams on Flikr dedicated to Bento!  You can get a lot of ideas from looking at photos.  There are some great ideas to be found!

One of my girls favorite Bento items are “Mock Sushi”

Turkey “Sushi” Rolls are easily made with bread, cream cheese, sliced turkey and veggies of your choice!  Take your bread slices and roll them out flat with a rolling pin or a cup.  Spread cream cheese on the bread and lay thin sliced Turkey at one end with some veggies.  A sliced tomato, match stick cut carrots or anything else you desire.  Roll it all up nice and snug!  Cut the roll in half, then cut those halves in half again!

Another fun one uses Nori Wraps (seaweed).  You take your Nori sheet and spread with mashed Avocado.  Layer on fresh spinach, match stick style carrots, green onions, garlic, sea salt, veggie slice cheese…oh yum!  Roll as directed and cut into the bite size sushi pieces.  Nori is packed with nutritional goodness!

I really need to make an effort to photograph some of our bento projects and post them.  The girls have a blast making and eating them!

    Here’s a fun recipe:

    Peanut Butter Banana Wraps

    Ingredients:

    Tortilla Wrap

    Peanut Butter

    Banana

    Honey

    Directions:

    Spread wrap with peanut butter. Place banana slices on top of peanut butter. Drizzle with a little honey. Wrap and cut into segments

    Honey Crunch Bars

    Ingredients:

    1/2 cup firmly packed brown sugar
    1/3 cup vegetable oil
    1/4 cup pure honey
    1 1/4 cup of muesli or rolled oats
    2 tablespoon bran cereal
    1/4 cup dried fruit of choice (raisins, apricots, mixed fruit, etc.)

    Makes 12 bars

    Directions:

    Preheat oven to 375 degrees F. Grease a 9 inch by 13 inch pan, or two 8 inch by 8 inch pans. Put sugar, oil and honey into a large bowl and microwave on medium for 2 minutes. Stir in muesli, bran cereal and fruit. Mixture should be moist enough to form a ball, without extra liquid. Put mixture in prepared pan and spread evenly. Bake for 30 minutes. Remove from oven and cut into bars while still hot. Wait until bars cool before removing from pan.

    My son loves these:
    Jammy Breakfast Bars
    Ingredients:

    1/2 cups flour
    1 teaspoon baking powder
    1 cup brown sugar
    1 1/2 cups rolled oats
    3/4 cups butter
    1 1/2 cups strawberry or apricot jam

    Makes approximately 12 bars

    Turkey Wrap for lunchboxes:

    Turkey Roll Ups – cream cheese, 2 to 3 slices turkey breast, a few iceberg lettuce leaves, tomato (thinly sliced)

    Spread wrap with cream cheese. Top with remaining ingredients and roll tightly.

    Kid-Friendly Chicken Nachos
    Ingredients:

    2 skinless/boneless chicken breast halves (chopped in small pieces)
    1 tablespoon vegetable oil
    1 (12 ounce) package corn tortilla chips
    1 (8 ounce) package shredded Mexican-style cheese (I use low fat cheese)
    1 cup fresh tomatoes (chopped into cubes)

    Directions:

    In a bowl stir together chicken and oil. Heat a skillet to medium heat and add chicken mixture. Cook, stirring often, until chicken is no longer pink. Remove from heat and set aside. Preheat oven to 350F. Spread a thin layer of tortilla chips in a 9×13 inch baking dish. Sprinkle a portion of the chicken and tomatoes over the tortilla chips. Repeat layers ending with a sprinkling of cheese on the top. Bake for 15 minutes or until nachos are heated through and cheese is melted. Serve with a dollop of guacamole, sour cream and salsa.

    Cheesy Taco Kid Mexican Recipe
    Ingredients:

    1 pound lean ground Turkey (much more healthful)
    1 cup shredded Mexican-style cheese
    12 taco shells
    2 cups shredded lettuce
    1 cup fresh chopped tomatoes
    1 can sliced black olives
    1 (8 ounce) jar salsa of choice

    Directions:

    Place ground beef in a skillet and cook over medium heat, stirring often, until no longer pink. Remove from heat and drain fat. Stir in cheese and olives and mix well until cheese is melted. To assemble tacos spread 2 tablespoons of ground beef and cheese mixture into taco shells. Top with lettuce, tomatoes and salsa.

    Chicken Burrito Recipe
    Ingredients:

    3 cups cooked chicken breast (shredded)
    1 1/2 cups water
    1 package taco seasoning mix
    8 flour tortillas
    2 cups shredded lettuce
    1 cup fresh diced tomatoes
    1 cup shredded cheddar cheese ( I use the lowfat cheese)
    1 (8 ounce) jar salsa of choice

    Directions:

    Bake, boil or broil chicken breast until cooked through and no longer pink. In a skillet combine cooked chicken, water and taco seasoning. Bring to a boil, reduce heat and simmer uncovered for 10 minutes, stirring occasionally. To assemble burritos, heat tortillas according to package instructions. Spoon a little of the chicken mixture down the center of each tortilla. Top each tortilla with lettuce, tomato, cheese and salsa. Fold bottom edge of tortilla up and over until filling is covered. Then fold sides of tortilla in, until they meet in the middle. Roll into a burrito shape.

    Use Light Sour Cream on this one:

    Mexican Rice Bowl
    Ingredients:

    1 package yellow Mexican or Spanish style rice
    2 skinless/boneless chicken breasts halves
    2 tablespoons fresh lime
    1 teaspoon garlic powder
    2 cups shredded lettuce
    1 cup fresh diced tomatoes
    1/4 cup sour cream (light!)
    1/4 cup guacamole
    Green onions (thinly sliced) to garnish

    Directions:

    Cook the rice according to package instructions and set aside. Pour fresh lime juice and garlic powder over chicken breasts and bake at 350F for approximately 20 minutes or until cooked through. You can also fry the chicken breast in a skillet with a little oil, until cooked through. Chop chicken into pieces and set aside. To assemble rice bowl place a portion of rice in a shallow bowl. Top with a little shredded lettuce and a few diced tomatoes. Top with a little chopped chicken breast and a dollop of sour cream, salsa and guacamole. Garnish with green onions.

    Easy and delish!

    Easy Guacamole Kid Mexican Recipe
    Ingredients:

    2 ripe avocados
    1/4 cup green onion (thinly sliced)
    1 small tomato (diced)
    1 tablespoon chopped fresh cilantro
    2 tablespoons fresh lime juice
    Salt and pepper to taste

    Directions:

    Peel avocados, remove pit and chop into pieces. Place chopped avocado, lime juice and cilantro into a food processor and process on high speed until mixture is smooth (approximately 1 minute). Remove mixture to bowl and add diced tomatoes, sliced green onions, salt and pepper to taste and mix well. Serve cold to compliment your favorite Mexican dishes, as a dip or with tortilla chips.

    I tried these after a friend brought them to a Potluck.

    Baked Chicken Parcels

    Ingredients:

    4 chicken breasts
    1 cup mushrooms (finely sliced)
    2 cups potatoes (finely sliced )
    2 tablespoons olive oil
    1 tablespoon parsley (finely chopped)
    2 tablespoon fresh lemon juice
    Salt and pepper (optional)

    Directions:

    Take each chicken breast and make three slits on each (top side of breast). Place all ingredients in a large bowl or pot and combine fully (using hands or large wooden spoon). Cut four sheets of aluminium foil (large enough to make four parcels). Place one chicken breast and a handful of additional ingredients on each sheet of aluminium foil. Close around edges to make a square parcel shape (make sure each parcel is completely sealed and juices don’t leak). Do this four times to make four separate parcels. Place chicken parcels on baking tray. Bake in preheated oven at 375F for approximately 20 minutes or until chicken is fully cooked. Serve with side salad.

    Healthy!

    Honey Chicken Finger Recipe

    Ingredients:

    4 halved boneless/skinless chicken breasts (cut into strips)
    1 cup natural bread crumbs
    1 cup corn flakes (finely crushed)
    1 cup honey

    Directions:

    Preheat oven to 375F. Place corn flakes in a plastic bag and crush finely. Combine bread crumbs and crushed corn flakes in shallow bowl and set aside. Coat each finger lightly in honey mixture, then dip into bread crumb mixture. Coat evenly. Place chicken strips on lightly greased baking tray. Bake at 375F for approximately 20 minutes or until chicken strips are golden and cooked through.

    Quick & Easy Chicken Pie Recipe

    This quick and easy chicken pie recipe works really well with leftover chicken. Just chop up left over chicken and throw all ingredients in baking dish for a stress-free dinner.

    Ingredients:

    2 chicken halved chicken breasts (chopped into small pieces)
    2 tablespoons olive oil
    2 tablespoon flour
    1 1/2 cup milk
    3 tablespoons butter
    1/2 cup carrots (finely chopped)
    1/2 cup peas (frozen)
    1 cup breadcrumbs
    1 cup cheddar cheese (grated) but use the lowfat cheese

    Directions:

    Place olive oil in a frying pan and brown chicken for approximately 5 minutes and set aside. Heat butter in a small pan over low heat and add flour. Stir regularly until mixture thickens. Gradually stir in milk. Bring to a boil and keep stirring until mixture thickens. Place chicken, carrots, and peas into a lightly buttered baking dish. Combine well. Pour sauce mixture over chicken and vegetables. Combine cheese and breadcrumbs and sprinkle over sauce mixture. Bake uncovered at 350F for approximately 20 minutes or until golden brown and cooked through.

    Sweet and spicy (if you want) glazed Chicken

    Ingredients

    4 boneless, skinless chicken breasts, thawed
    1 can orange juice concentrate, thawed. (we use pulp free)
    3 tablespoons soy sauce (or to taste)
    2-3 tablespoons Honey
    Red pepper flakes, also to taste
    1 teaspoon garlic powder

    Salt, pepper, garlic to season chicken

    Pre heat heavy skillet over med high heat with approx 1 tablespoon olive oil, season chicken breasts with, salt, pepper and garlic salt on both sides. When oil starts to shimmer, add chicken breasts to pan, cooking till color develops on them, and they no longer stick to the pan (sign to know when it is time to turn). Turn chicken, and repeat browning on other side, but do not cook threw at this point.

    In the mean time, in a small bowl, add 1/2 half can thawed orange juice to the bowl, along with other ingredients, whisk well to combine. Adjust your pepper flake to your taste. I like stuff a little spicy, so we go a little heavy. The sweet does balance the hot.

    When chicken is brown on 2nd side, add glaze, bring to high simmer, reduce heat to med low, cover and let cook 5-8 more mins, or until glaze has thickened.

    If you wish to have a thicker glaze, remove chicken from pan, move to a plate and cover to keep warm, and then simmer mixture a few more mins until it is as thick as you like.

    This glaze is very good over salmon as well. It can also be used over stir fry (one of our family faves!) , or pork and turkey cutlets.

    My daughter loves home made chicken soup! So much healthier then in the can.

    Take a whole chicken, wash it inside and out with cold water, put it in a large pot of water, add soup greens which you can find in the product section of your supermarket and boil for about two hours. Then strain the soup from the soup greens and chicken prices. When cool, take the meat from the carcas, add it back to the soup, and freeze what you dont use. How easy is that!

    I like to make what I call nanners. Basically you take a banana and some cinnamon and a bit of honey if the kid isn’t too young for honey otherwise you can use some maple syrup. You mash up the bananas and the cinnamon and honey and you have a healthy banana pudding.

    I have found that sandwiches are great lunch options. Whole wheat with turkey, swiss and almond butter – toasted as a panini! Then include some fruit and maybe one of those Kashi dark chocolate chip cookies and it’s perfect!

    My granddaughter loves this dip. She will use our homemade pita chips and veggie sticks.

    Easy Black Bean Dip
    •1 15-ounce can black beans, drained and rinsed
    •1/2 cup Salsa
    •1/4 cup plain fat free Greek-style yogurt
    •1/4 tsp cumin
    •2 tbsp chopped fresh cilantro (I use onion)

    Prep:
    Place drained black beans and salsa in a blender and puree until smooth. Spoon dip into a bowl. Stir in yogurt, cumin and cilantro.

    Use different types of salsa and spices to create your own version.

    Sweet & Sour Kielbasa

    1 large bottle ketchup
    1 med. onion
    1/2 lb. brown sugar
    1 teaspoon dry mustard
    1 teaspoon tobasco sauce
    1 teaspoon worcester sauce
    1/4 cup margarine
    1 tablespoon cider vinegar

    saute onion in melted margarine, add ketchup and all other ingredients and simmer for 45 min.
    in Crockpot.

    My kids love smoothies, so we have smothies as an after school treat :

    Strawberry Banana Smoothie
    1 cup frozen strawberries
    2 cups orange juice
    1 banana, cut in pieces
    ½ cup milk
    2 tablespoons sugar
    Add ingredients together in blender and blend until smooth

    I like using the Mission brand Soft Taco Carb Balance Flour Tortillas. They are high in fiber but taste really good. One lunch or breakfast fave of my daughter’s is to spread them with peanut butter, then spread with Nutella. Top the Nutella with either sliced bananas or strawberries. Roll up tightly then slice into 6 or 8 pieces, depending on how small you would like them.

    Love your “sushi” idea. I’d never thought of that but it would be really cute!

    An easy idea my kids like is to take a pita, spread hummus on the insides on both sides, then fill with chopped veggies and meat. Thanks.

    This is an easy bread, and all the alcohol cooks off, so it is fine for kids. They may get a kick out of eating it though, just because of the name.

    Beer Bread:
    3 cups flour
    1/3 cup sugar
    1.5 tsp salt
    3 tsp baking soda
    12 oz. beer

    Mix all dry ingredients together, then add in the beer and stir to get a sticky dough. Pour it into a loaf pan and bake at 375 for 50-60 minutes. Enjoy your preservative-free bread!

    Spicy chicken quesadillas. This uses boiled chicken, so it is low in fat.

    4 boneless and skinless chicken breasts, trimmed
    1 cup salsa
    1 cup shredded cheese
    8 flour tortillas

    Boil the chicken in water, and let cool. Using your hands, shred the chicken, and then mix it with the salsa. With a frying pan on medium heat, put in a flour tortilla, and cover 1/2 with cheese and the chicken mix. Fold over, cook on the bottom, then flip (the melted cheese holds it together) and cook the top side. Repeat for each tortilla.
