Wyoming Cowboy Cookie Recipe

Wyoming is such a beautiful state!  When I think of Wyoming I think of beautiful landscapes, cowboys and Indian Paintbrushes.

102/365 Lauren and Emma in a field of Indian Paintbrushes!When Better Homes and Gardens asked us to represent Wyoming in their State Cookie Contest, I was super excited! I knew right away what we were going to make!

We made a modified Cowboy Cookie!  Complete with homemade Icing decoration!  These have to be the best cookies I have ever had!  Morgan and her friend even sold some today!  They were told they were the most delicious cookies!

The Cookie Recipe

  • 1 cup flaked coconut
  • 3/4 cup chopped pecans
  • 1 cup butter, softened
  • 1 1/2 cups packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 2 cups chocolate chips
  • 1/2 cup cocoa

Place coconut and pecans on a baking sheet lined with parchment paper. Bake at 350 , stirring every 2 minutes for 6 to 8 minutes until toasted.  Once finished set aside to cool.

Cream the butter and sugars in a large mixing bowl until light and fluffy.  Once that is done you will need to add your eggs and vanilla, beat well.

In another bowl Combine the flour, baking soda, cocoa and salt being sure it is mixed well.  Once mixed add these dry ingredients to the creamed mixture, being sure to beat well.

Lastly, stir in the oats, chocolate chips and toasted coconut and pecans.

Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350 degrees for about 12 minutes or until browned.  Remove to wire racks to cool.

The Icing Recipe

  • 1 cup crisco
  • 1 tsp vanilla
  • 2 tbs water
  • 1 lb powdered sugar
  • 1 tbs meringue powder
  • Icing coloring (we used orange and red to get a deep orange for the flower and green for the stems)

Cream the Crisco and liquids together.  Then add dry ingredients and mix thoroughly.  Gradually stir in coloring until you get the desired shades.  I would love it if you would head on over to Facebook and like Better Homes and Gardens.  Once you have liked the page you will see the State Cookie Contest linked on the left.  My cookie is the Wyoming State Cowboy Cookie.  I would love your support in voting for our cookie in this contest!  Public voting will begin at 9am ET, Thursday, June 30, 2011!
